    Poached egg & spinach toast

    1 tsp white wine vinegar
    2 medium essential Waitrose Free Range Eggs
    100g bag Waitrose Baby Spinach
    2 slices wholegrain bread
    1 tbsp light mayonnaise
    1 tsp sunflower seeds, toasted 


    1. Bring a large pan of water with the vinegar to the boil and stir, gently add 1 egg and poach for 2-3 minutes or until your liking, and repeat with the remaining egg.

    2. Meanwhile, place the spinach in a large bowl and microwave for 1 minute until just wilted, then season.

    3. Toast the bread, spread with mayonnaise and top with the spinach. Place a poached egg onto each piece of toast and sprinkle with seeds and black pepper.
