Prawn & leek chowder

2 tsp vegetable oil
150g essential Waitrose New Potatoes, cut into 2cm dice
1 leek, sliced
400ml Cooks’ Ingredients Vegetable Stock
195g can essential Waitrose Sweetcorn In Water, drained
½ x 235g pack frozen essential Waitrose Raw King Prawns
200ml semi-skimmed milk
1. Heat the oil in a medium saucepan, add the diced potato and the sliced leek and fry for 5 minutes. Add the stock and the sweetcorn, then bring to the boil, cover and simmer for 5 minutes.
2. Add the king prawns and milk to the vegetable mixture and cook for a further 5 minutes until the potatoes are tender
and the prawns are cooked right through.
