    Quick and healthy honey and lime cheesecake

    A quick and easy healthier alternative to cheesecake for a week day supper dessert. A simple biscuit base, topped with creamy Greek yoghurt, the sweetness of honey, and finished with a citrus kick.

    Why should your recipe win?
    Everyone is working hard these days and wants a little luxury but without the wastline inches. This is a way of getting your cheesecake and eating it for a little worthy self indulgence during the work week.

    • Total time: 5 minutes prep + 0 minutes cooking

    Serves: 2


    • 3 digestive biscuits
      50g/2oz cream cheese
      2 heaped tablespoons Greek yoghurt
      2 teaspoons runny honey
      Lime zest


    1. Crush the digestive biscuits using the back of a spoon or a food processor. Combine well with the cream cheese. Divide the mixture in half. Put each half in a mound on a dessert plate and press down into a rough circle. Spoon a tablespoon of yoghurt over each biscuit base, drizzle over a teaspoon of honey and sprinkle lime zest to taste.
