Tomato, watermelon & feta salad

Serves: 6-8 (as a side)
1 red onion, finely sliced
1 lemon, juice
1 small watermelon, peeled and cut into chunks
200g feta, crumbled
25g pack mint, leaves only, roughly torn
2 x 250g packs Mixed Baby Tomatoes, halved
75g walnuts, toasted and roughly chopped
2 tbsp extra virgin olive oil
2 tbsp pomegranate molasses
1. Combine the red onion and lemon juice in a small bowl then set aside for 15 minutes.
2. In a large bowl or platter, combine the watermelon, feta, mint, tomatoes and walnuts. Lift the onions out of the lemon juice and scatter over the salad (reserving the lemon juice).
3. Mix the oil and pomegranate molasses into the reserved lemon juice, season, then drizzle over the salad. Delicious served with grilled meat or fish or as part of a larger meal or mezze.
