    Warm Toasted Bread and Tomato Salad

    This tasty salad is tossed at the last moment with warm, crunchy croutons to give it great flavour and texture. Use tomatoes at room temperature, so they're at their best.

    • Preparation time: 10 minutes
    • Cooking time: 10 minutes

    Serves: 4

    Ingredients

    • 1 clove garlic, crushed
    • 4 tbsp olive oil
    • ½ x pack Waitrose 2 Half Ciabattas
    • 450 g mixed tomatoes
    • 25g pack basil, leaves only
    • 1 tbsp red wine vinegar
    • 6 balls from a 250g pack Garofalo Mozzarella Di Bufala Bocconcino, drained

    Method

    1. Preheat the oven to 200°C, gas mark 6. Tear the ciabatta into bite-sized chunks and place on a baking sheet. Drizzle over 3 tbsp of the olive oil and toss the bread with the garlic and some seasoning until well coated in the oil. Bake for 10 minutes, or until golden.
    2. Cut any big tomatoes into chunks or quarters, and any smaller ones in half. Place them in a salad bowl. Shred half the basil leaves finely and add to the tomatoes, with the whole basil leaves, vinegar and remaining olive oil. Toss well to combine and season generously.
    3. Tear the bocconcino in half and scatter over the salad with the toasted bread. Toss briefly and serve immediately.
