Umami-roast aubergines
The neutral taste of aubergine makes it a great platform for strong umami flavours in this straightforward roast.
- Halve aubergines lengthways and cut a criss-cross grid into the flesh of each. Mix Umami Paste in a little sesame oil and brush all over the cut faces of the aubergine.
- Transfer to a hot oven and cook for around 30-40 minutes, or until the aubergines and soft and starting to char. Eat warm with sticky rice, spring onions and pickled cucumbers.
