Oven cook

Preheat oven and baking tray. For best results, brush the pastry with egg yolk, avoiding the air holes. Remove the wellington and greaseproof paper from the plastic tray. Place the wellington on the greaseproof paper onto the preheated baking tray. Place on the middle oven shelf and cook for 35 minutes. Reduce the oven temperature to 210°C / 190°C (Fan) / Gas Mark 6½. Cook for a further 10 minutes for medium rare or 20 minutes for well done. Due to the natural variability in the thickness of the wellingtons, the cooking instructions provided are a base guide. For thicker wellingtons, additional cooking time may be required. Ensure the wellington is piping hot before serving. Cut off approx. 2cm from both ends, carve and serve. ……Chef's Tip: Cook to medium rare and allow to stand for 15 minutes before serving.
