In 1811 John and Helen Cumming sited their first still at Cardow (pronounced "Cardoo") Farm on Mannoch Hill, high above the River Spey. Spring water, naturally softened by a layer of peat, bubbled from the ground, and they deemed this to be the perfect spot for their farm, and for a distillery that would stand the test of time.
The early years were far from easy, and John Cumming was convicted three times for distilling without a license—although it is presumed that he took on the convictions to keep his wife out of trouble with the law. Rather than distilling, his true focus was on farming the fields, while his savvy wife was busy running the distiller.
Their run-ins with the law led Helen to come up with a clever idea that became the iconic symbol of the Cardhu brand. Whenever she heard that the excise men were doing inspections, she would raise a red flag at the Cumming house and offer the inspectors a cup of tea or a bed for the night, so that distant Speyside distillers had time to react to the warning flag on Mannoch Hill. Thus, the legend of Helen Cumming and the distinctive and famed Cardhu logo were born.
Helen Cummings was the first woman ever to found a distillery and produce whisky.
