Notes of chocolate fudge cake are undercut with clove and cardamom, with hints of plum jam and redcurrant jelly. Rich cherry, toffee and oak follow, finishing on raisin, honey and brown sugar. Crimson Casks is a unique assembly of different cask types: ex-oloroso sherry butts, seasoned to our specifications ex-Spanish red wine barrels, and custom French oak casks. We vary the finishing periods in these special casks to achieve the desired impact.
