The striking colour of this black garlic comes from the bulb being slowly heated and aged. The result is an intensely savoury but syrupy flavour with hints of balsamic vinegar and tamarind. It is sold in a tub, and you can remove each clove in the same way you would from a fresh bulb. The soft and sticky cloves can be used mashed with soy sauce and a little cornflour in a stir-fry, in butter and sauces, or mixed into home-made burgers.
