British venison rack.This elegantly French-trimmed whole rack of venison has a rich gamey flavour. The tender and succulent texture naturally contains just enough fat to keep the meat moist and juicy as it cooks. Our venison comes from red deer aged 12-27 months, reared on British farms. The deer thrive on a grass-based diet, producing tender, well-flavoured meat. All our venison can be traced back to the farms and estates where they were raised.

Oven cook (From Chilled)
Oven cook. Rare: 15 minutes per 500g. Medium: 20 minutes per 500g. Preheat oven (180ºC / 160ºC (Fan) / Gas Mark 4). Seal all sides of the venison rack in a frying pan before placing venison in a roasting tin in centre of oven. Once cooked, allow to rest for 10 minutes before serving. Due to the natural variability in the thickness of the meat, the cooking instructions provided are a base guide. For thicker venison racks, additional cooking time may be required. Ensure the surface of the meat is thoroughly cooked. Carving instructions: Cut down between each bone carving the venison into cutlets. (Oven: 180°C, Fan: 160°C, Gas: Gas Mark gas 4)
