Gas 7, 220°C, Fan 200°C, 1 hour 30 mins
Preheat oven. For best results, empty the contents of the bag onto a wired rack in a suitably sized ovenproof dish, ensuring the meat is rind side up and discarding any cook juices. Set aside the sachet of sauce, and carefully score the rind on top of the joint using a sharp knife. Place the pork into the centre of the oven for 45 minutes. Remove from the oven, rub the top of the joint with light olive oil, and sprinkle liberally with salt. Return joint to the oven for a further 45 minutes. Remove from oven. For best results, leave to rest for at least 10 minutes. To carve, slice through the joint to separate the ribs from the meat. Portion the ribs and belly meat, and serve with the spiced apple sauce.
