Gas 7, 220°C, fan 200°C, 1 hour 20 minutes
Preheat oven. Remove all packaging and discard any cooking juices. Using a pair of scissors cut lengthways down the netting, peel away from the meat and discard. Transfer meat into a baking tray with a wire rack. Pat joint dry and rub entire surface of pork with 1 tsp oil and a sprinkle of salt. Place tray directly on middle shelf of oven. Cook for 40 minutes. Increase oven temperature to electric 240°C, fan 220°C, gas 9. Cook for a further 40 minutes. Turn tray frequently to ensure crackling is crisp and golden brown. Remove from oven and rest for 10 minutes. To serve, carve joint into slices.
