Preheat oven. Remove all packaging Place joint in a roasting tray. Rub oil and salt onto rind then cook in the centre of oven for 45 minutes. …Turn oven temperature down to 180°C/Fan 160°C/Gas 4 and cook for 30 mins per 500g. Remove the crackling from the joint and cover with foil. Allow to rest for 15 minutes. Place the crackling back in the oven and turn the temperature back up to 240°C/Fan 220°C/Gas 9 while the joint is resting. Do not reheat once cooled. (Time 45 mins+30 mins per 500g, Oven: 240°C, Fan: 220°C, Gas: Gas Mark 9)
