Squeeze the sausages from their skins and roll into small balls.
Brown in a little oil in a medium frying pan or skillet until golden. Stir in 2 tsp seasoning, then sizzle until fragrant. Add the passata and simmer for 10 minutes, until the sausages are cooked through and there is no pink meat.
Make 4 dimples, then crack an egg into each. Season, cover and cook gently for 5 minutes, or until the whites are set. Sprinkle the eggs with more seasoning to serve. Good with toast on the side.
