Ingredients
- 75g short grain pudding rice
- 650ml Alpro No Sugars Almond Drink
- 2½ tbsp maple syrup
- 1 Granny Smith apple, cored
- 2 tbsp pumpkin seeds
- ½ tsp ground cinnamon
Method
Put the rice, almond drink, ½ tbsp maple syrup and a pinch of salt in a medium saucepan. Bring to the boil, then lower the heat and simmer for about 25 minutes, stirring occasionally, until the rice is tender and coated in a silky, creamy sauce (add a splash more almond drink, if needed).
Five minutes before the pudding is ready, put the apple, remaining 2 tbsp maple syrup, pumpkin seeds and cinnamon in a small frying pan with 1 tbsp water. Set over a medium heat for 4-5 minutes until the apple wedges have softened a little and are syrupy. Divide the rice pudding between bowls and top with the sticky apples.
