Ingredients
150g rolled oats
150g jumbo oats
70g dried cranberries
70g dried cherries
70g blanched hazelnuts, roughly chopped
50g flaked almonds
100ml maple syrup
150ml avocado oil (or mild olive oil)
1 tsp vanilla bean paste
1½ tsp mixed spice
1 orange, zest
½ tsp sea salt flakes
Method
Preheat the oven to 180˚C, gas mark 4. In a large bowl, mix together the oats, cranberries, cherries and nuts. In a jug, mix the maple syrup, oil, vanilla paste, mixed spice, orange zest and salt. Pour over the dry ingredients and mix well.
Tip the mixture into a non-stick roasting tin, spread out and put in the oven for 15 minutes. Remove and stir, then return to the oven for 10-15 minutes until golden. Allow to cool before decanting into airtight sterilised jars or pots; store for up to 1 week at room temperature.
