  • 50g ginger, grated
  • 2 tbsp soft light brown sugar
  • 5 unwaxed limes
  • 300ml dark rum
  • 1 L ginger ale


  1. Put the grated ginger in a mixing jug with the light brown soft sugar, the juice of 4 limes and the dark rum. Mix until the sugar dissolves, then leave to stand for 10 minutes. Half-fill a large jug with ice. Strain the rum mix through a fine sieve into the jug, pressing to push out all the ginger juice. Top up with 1 litre ginger ale and add slices of 1 unwaxed lime to serve.
