Cook’s tip
On episode 16, 2026 of Dish, the Waitrose podcast, Angela makes her own cacio e pepe paste. She lightly toasts 2 tbsp whole peppercorns on medium heat for 1-2
minutes until highly fragrant, then crushes them to a fine, even grind in a pestle and mortar. She combines the ground pepper with 1 cup grated Parmesan, 1 cup grated pecorino and 2 tbsp starchy pasta water to form a thick paste
And to drink...
On episode 16, 2026 of Dish, the Waitrose podcast, this recipe is paired with Broglia Gavi di Gavi DOCG – a fresh, dry Italian white with hints of almond.
