Grilled manouri with zingy strawberry salsa

Inspired by a mix of watermelon and feta, this recipe takes that sweet-salty combo up a notch, and will be the star of your barbecue table this summer. It’s a main in its own right, and a killer side with an alfresco spread.

Ingredients

  • 4-5 tbsp olive oil
  • 1 tsp red wine vinegar
  • ½ tsp ground cumin
  • 150g cherry tomatoes, finely chopped
  • 100g Waitrose Strawberries, chopped
  • ¼ small red onion, finely chopped
  • ¼ x 25g pack flat leaf parsley, leaves only, finely chopped
  • 2 x 170g packs Odysea Manouri Cheese PDO
  • 2 tsp clear honey

Method

  1. For the strawberry salsa, whisk 3 tsp oil, the vinegar and cumin in a bowl and season lightly. Add the tomatoes, strawberries, onion and parsley, then stir together.

  2. Heat a griddle or frying pan over a medium heat (or grill or barbecue). Brush the cheese with 1-2 tsp oil, then sear for 1-2 minutes each side, until golden, charred and coming away easily from the pan.

  3. Cut each round of manouri into 4-6 wedges. Arrange on a sharing plate, drizzle over the honey, then spoon over the salsa. Lovely served with salad leaves and crusty bread, if you like.

Cook’s tip

This fruity salsa also goes well with grilled fish or chicken. Halloumi is a brilliant alternative to manouri.
