Hot zombie

The Zombie is a notoriously powerful rum cocktail that emerged from the theme bars of post-war California and spawned countless imitations. One of these was the Hot Zombie, invented by a Puerto Rican rum company. Served with a spoonful of butter on top, it’s like a tropical variation on Hot Buttered Rum.

  • 1 tsp demerara sugar
  • 15ml passion fruit syrup
  • 30ml pineapple juice
  • 15ml lime juice
  • 60ml gold rum
  • 1 tsp unsalted butter
  • 1 tsp overproof (extra strength) rum (optional)
  • 1 cinnamon stick, to garnish


  1. Swirl just-boiled water around a heatproof glass or mug to warm it, then discard. Add the sugar and dissolve it in 1 tbsp just-boiled water. Add the passion fruit syrup, pineapple and lime juices and the gold rum; top up with 120ml just-boiled water. Add the butter to the top. If liked, you can top this with a bar spoonful (1 tsp) of overproof rum and set it alight. Garnish with the cinnamon stick.
