Ingredients

  • 500g Essential Parsnips, peeled and quartered lengthways
  • 2 tbsp vegetable oil
  • ½ tsp fine sea salt
  • 4 sprig/s thyme plus extra picked leaves to serve
  • 3 tbsp maple syrup
  • 30g blanched hazelnuts, toasted and roughly chopped

Method

  1. Preheat the oven to 200ºC, gas mark 6. Put the parsnips in a roasting tin; toss with the oil. Season with the salt and add the thyme. Roast for 20 minutes, then drizzle over the maple syrup; toss to coat. Roast for 10-20 minutes more until tender and caramelised, then scatter with the thyme leaves and hazelnuts.
