'A classic combination of sharp rhubarb set into a thick, creamy custard. Get creative with the piped compote; I've chosen a heart, but you could do other patterns'

    Ingredients

    For the sweet pastry:

    • 275g plain flour
    • 25g ground almonds
    • 50g icing sugar
    • 175g cold, unsalted butter, diced
    • ¼ tsp salt
    • 1 medium Waitrose British Blacktail Egg, yolk only

    For the rhubarb compote:

    • 250g rhubarb
    • 25g caster sugar
    • 2 tbsp clear honey
    • ½ Juice of lemon
    • 1 tsp vanilla bean paste

    For the custard:

    • 4 Waitrose British Blacktail medium Eggs, yolks only
    • 50g caster sugar
    • 125ml double cream
    • 125ml whole milk
    • 1 tsp vanilla bean paste
