Melon, tomato & burrata salad
The ultimate summer salad from Martha Collison – the tomato adds earthiness
to the melon mix, while the burrata enjoys centre stage

Ingredients
280g pack melon slices, or slices cut from a white or orange-fleshed melon
200g cherry tomatoes
3 tbsp extra virgin olive oil
¼ x 25g pack mint, leaves only finely chopped
1 large red chilli, finely chopped or thinly sliced
285g pack No.1 Burrata, drained
3 slices serrano ham, torn into large pieces
Method
Chop the melon into small chunks,
halve each tomato, then place both in
a large bowl.
Drizzle over 2 tbsp of the oil and sprinkle in the chopped mint and chilli. Season well and toss together until everything is well coated.
Arrange the salad on a pretty plate, then carefully drain the burrata and nestle the cheese into the centre. Drizzle the burrata with the remaining oil, add the ham and serve immediately.
