Ingredients

  • 280g pack melon slices, or slices cut from a white or orange-fleshed melon
  • 200g cherry tomatoes
  • 3 tbsp extra virgin olive oil
  • ¼ x 25g pack mint, leaves only finely chopped
  • 1 large red chilli, finely chopped or thinly sliced
  • 285g pack No.1 Burrata, drained
  • 3 slices serrano ham, torn into large pieces

Method

  1. Chop the melon into small chunks, halve each tomato, then place both in a large bowl.

  2. Drizzle over 2 tbsp of the oil and sprinkle in the chopped mint and chilli. Season well and toss together until everything is well coated.

  3. Arrange the salad on a pretty plate, then carefully drain the burrata and nestle the cheese into the centre. Drizzle the burrata with the remaining oil, add the ham and serve immediately.

Cook’s tip

Martha’s tip The salad (without the burrata and ham) will keep in the fridge for up to 2 days before serving.
