Passion fruit coronation cocktail
Inspiration for this drink comes from a classic French 75, usually made with lemon, gin and Champagne. A royally delicious cocktail to enjoy for The Coronation.

Ingredients
200ml Buckingham Palace Gin
3 tbsp No.1 Passion Fruit Curd
75ml bottle Champagne, chilled
24 raspberries
1 passion fruit (optional)
Method
In a jug, stir together the gin with the passion fruit curd. Cover and set aside in the fridge if preparing in advance.
When ready to serve, divide the gin mix between 8 cocktail glasses, such as a coupe, then top up with Champagne.
Place 2-3 raspberries into each glass, then add a little passion fruit, if using, and serve.
Cook’s tip
For an alcohol-free version of this cocktail, replace the gin with Sipsmith FreeGlider, and the Champagne with Belvoir Elderflower Pressé.
