Bursting with colour, Rosy Cheeks balances bitter, sweet and fruity flavours with a seasonal dash of fizz.

Alex Szrok, chef at the Waitrose Cookery School, prepared this recipe for a canapés and cocktails live class in December 2023. The party menu also included Haddock Scotch quail eggs, Roast beef, horseradish and Yorkshire skewers, Potato rostis, crème fraîche & dill, Mini mortadella, pistachio & ricotta sandwiches, Chicory, blue cheese & candied walnut boats, Mince pie Eton mess and another cocktail, The Polar Espresso. Ingredients

  • 60ml Cocchi Rosa
  • 120ml Levantine Table Pomegranate & Lime Pressé
  • 2 blush orange wheels
  • 1 sprig/s fresh thyme
  • Prosecco to top up

Method

  1. Add the Cocchi Rosa to a large, ice-filled wine glass or copa. Pour in the pressé, add the orange wheels and thyme. Top up with Prosecco and stir.
