    Ingredients

    • 6 garlic cloves, plus 1 whole head
    • 1 pinch sea salt flakes
    • Leaves from 8 sprigs thyme, plus 4 more sprigs
    • 8 tbsp olive oil
    • 2kg whole leg of lamb
    • 2 large onions, cut into wedges
    • 300g slim bunched carrots, halved or quartered if large
    • 500g waxy potatoes, thickly sliced (I don’t bother to peel them)
    • 400ml Amontillado sherry (you may need more)
