Smoked salmon Ritz bites

These make for fabulous Christmas canapés. The smoked salmon pâté can be prepared 24 hours in advance and chilled until ready to assemble.

  • 100g Philadelphia Original soft cheese
  • 2 tsp Essential Hot Horseradish Sauce
  • ½ unwaxed lemon, zest of all, 1 tsp juice
  • 100g pack smoked salmon, roughly chopped
  • 3 tbsp chopped chives
  • 16 Ritz Crackers
  • 60g baby beetroot in mild malt vinegar, cut into small cubes


  1. Put the soft cheese, horseradish, lemon zest and juice, and smoked salmon in a small food processor, then pulse until roughly combined. Add 2 tbsp chives and season with freshly ground black pepper, then pulse again to a coarse pâté.

  2. Put 1 heaped tsp pâté on top of each Ritz cracker, then scatter with some beetroot and the remaining chives. Serve straight away.

Cook’s tip


Ritz crackers

If you don’t want to just snack straight from the box, crush the crackers to crumbs and use to coat chicken before baking. Or, for a sweet option, sandwich two crackers with peanut butter, then dip in melted chocolate. Leave to set before eating – if you can wait.
