Ingredients

  • 1 tbsp olive oil, for frying
  • 250g frozen Cooks’ Ingredients Soffritto Mix
  • 2 clove/s garlic, crushed
  • ¼ tsp chilli flakes
  • 4 tbsp essential Waitrose Tomato Puree
  • 2 x 400g cans Essential Cannellini Beans, drained and rinsed
  • 4 tbsp Newman’s Own Sticky Barbecue Sauce & Marinade
  • 400ml chicken stock, made with 1 stock cube
  • 454g pack 8 Essential British Pork Sausages
  • ¼ x 25g pack flat leaf parsley, finely chopped (or use chives)

Method

  1. Preheat the grill. Heat the oil in a large sauté or frying pan, then add the soffritto, garlic and chilli flakes and fry for 5-6 minutes, stirring often, until softened.

  2. Add the tomato purée and cook, stirring often, for 3-4 minutes, then add the cannellini beans, barbecue marinade and chicken stock. Bring to a simmer and cook for 15-20 minutes more, until the sauce has thickened and the beans are soft.

  3. While the beans cook, grill the sausages for 15-20 minutes until thoroughly cooked, the juices run clear and there is no pink meat. Season the beans to taste, then spoon into shallow bowls. Slice the sausages and serve on top, with a scattering of parsley.
