Ingredients

  • 1 Waitrose Mini Watermelon
  • 200g pack baby cucumbers, sliced
  • 2 x 150g packs Chavroux Soft Ripened Goat’s Cheese Log, sliced
  • 4 salad onions, thinly sliced
  • 25g pack mint, leaves roughly chopped
  • 2 tsp Cooks’ Ingredients Spicy Sriracha Sprinkle
  • 1 unwaxed lime, zest and juice
  • 1 tbsp extra virgin olive oil

Method

  1. Cut the watermelon into 8 wedges. Remove the rind and cut the flesh into triangles. Arrange the melon, cucumber and cheese on a large platter.

  2. Scatter over the salad onions, mint, sriracha sprinkle, lime zest and a little salt. Drizzle over the lime juice and olive oil, then serve.

Cook’s tip

To prepare this ahead, complete the recipe to the end of step 1, then cover and chill. Continue with step 2, just before serving.
