Ingredients

  • 3 sprig/s winter herbs
  • 200ml UKIYO Japanese Blossom Gin
  • 150ml just-boiled water
  • 600ml sparkling elderflower pressé
  • Ice cube

Method

  1. Put 3 sprigs of winter herbs (thyme, rosemary and sage work well) into a heatproof jug. Add 150ml just-boiled water. Steep for 3 minutes, strain and cool.

  2. Stir in 200ml UKIYO Japanese Blossom Gin, then divide between 4 balloon glasses. Add ice and top each with sparkling elderflower pressé (about 150ml). Garnish with more herbs.
