Zingy melon & prawn salad

Ingredients

  • 275g pack microwaveable cooked rice noodles
  • 1 pack/s 130g pack cooked garlic & chilli king prawns
  • 200g No.1 Matice Melon, peeled and roughly chopped
  • 160g cucumber, halved, deseeded and sliced
  • 1 small shallot, finely sliced
  • 1 handful/s Thai basil leaves, roughly chopped

Dressing

  • 2 tbsp nam pla fish sauce
  • 1 large lime, juice
  • 1 tbsp maple syrup

Method

  1. Microwave the rice noodles according to pack instructions. Meanwhile, mix all the dressing ingredients in a small bowl.

  2. Tip the hot noodles into a large bowl and toss with half of the dressing and a splash of oil from the prawns. Set aside to cool for 5 minutes, then add the melon, cucumber, shallot, prawns and Thai basil. Toss everything together with a splash more oil from the prawns.

  3. Divide between plates and spoon over the remaining dressing.
