    Bee’s knees

    Legend has it that this fresh, slightly sweet drink was born in Prohibition-era America, with the honey and lemon employed to disguise the taste of poor-quality ‘bathtub gin’. Recent research suggests a different story – that it was created in Paris by a socialite who survived the sinking of the Titanic and became known as ‘the unsinkable Molly Brown’ (an equally great name for a cocktail). 

    • Preparation time: 5 minutes, plus cooling

    Serves: 1


    2 tsp clear honey
    50ml London dry gin
    20ml lemon juice
    10ml orange juice
    ice, for chilling
    strip of lemon zest, to serve
    honeycomb (we used Rowse Cut Comb in Acacia Honey), to serve (optional)


    1. Shortly before you want to make the cocktail, mix the honey in a small bowl with 1 tbsp boiling water. Once it’s cooled a little, put in a cocktail shaker with the gin, citrus juices and plenty of ice. Shake well, then strain into a coupe or martini glass. Garnish with the lemon zest and a chunk of honeycomb on a cocktail stick, if liked.
