    Quick & easy chicken enchiladas

    Serves: 4


    1 tbsp essential Waitrose Vegetable Oil
    2 essential Waitrose British Chicken Breast Fillets, thinly sliced
    1 essential Waitrose Green Pepper, sliced
    1 essential Waitrose Red Onion, sliced
    30g sachet Discovery Fajita Seasoning Mix
    320g pack Discovery Wholemeal Tortillas
    400g can essential Waitrose Chopped Tomatoes
    50g essential Waitrose Cheddar cheese, grated


    1. Preheat the oven to 200ºC, gas mark 6.

    2. Heat the oil in a frying pan and fry the chicken, pepper and onion for 5 - 6 minutes. Add the fajita seasoning with 4 tbsp water and cook for 1 minute.

    3. Divide the mixture evenly between the tortillas and roll up. Place in an ovenproof dish and pour over the tomatoes, scatter with cheese and bake for 25 - 30 minutes until golden.
