Crab and apple salad with rice noodles

100g rice noodles
4 essential Waitrose salad onions, sliced,
1 essential Waitrose cox apple, cored and finely sliced
2 x 170g cans crab meat
50g of rocket
½ x 20g pack coriander leaves
1 essential Waitrose lime,
1 tbsp essential Waitrose sunflower oil,
½ red chilli, finely chopped
½ tsp caster sugar
1. Cook the rice noodles according to pack instructions, then refresh in cold water, drain and place in a large bowl.
2. Slice the salad onions and add to the rice noodles along with the apple, crab meat, rocket and the coriander leaves.
3. Whisk together the juice of the lime, sunflower oil, chilli and sugar then pour the mixture over the noodles and season, then toss together and serve.
