    Lemon & coriander chicken with petits pois

    150g Duchy Organic Whole Grain Rice
    2 tbsp Duchy Organic Olive Oil
    1 Duchy Organic Onion, sliced
    1 clove Duchy Organic Garlic, crushed
    1 pack Duchy Organic Free Range British Chicken Mini Fillets, approx 300g
    1 Duchy Organic Lemon, zested then cut into wedges
    150ml organic chicken stock
    250g frozen Duchy Organic Petits Pois
    ½ x 28g pack coriander, finely chopped
    Duchy Organic Mayonnaise, to serve (optional)


    1. Cook the rice according to the pack instructions. Meanwhile, heat the oil in a nonstick frying pan, add the onion and garlic with a pinch of salt and gently fry for 3-4 minutes, until beginning to soften. Add the chicken with the lemon zest and fry for 3-4 minutes on each side, or until the chicken is thoroughly cooked, there is no pink meat and the juices run clear.

    2. Pour in the stock and add the petits pois, bring to the boil for 2-3 minutes until they are just cooked. Sprinkle over the coriander and season generously.

    3. Serve the cooked rice on plates with the chicken on top, wedges of lemon to squeeze over and a spoonful of mayo if you wish.
