Pan-fried pork with plum sauce

Serves: 2
350g essential Waitrose Pork Fillet, fat trimmed
½ tsp Cooks’ Ingredients Five Spice Blend
1 tbsp rapeseed oil
1 small echalion shallot, finely chopped
1 clove garlic, crushed
4 essential Waitrose Home Ripening Plums, halved, stoned and sliced
1 tbsp reduced salt soy sauce
1 tsp honey
300g pack rice noodles
1 tsp toasted sesame seeds
1 salad onion, trimmed and sliced diagonally
1. Cut the pork fillet into 8 slices about 2cm thick. With the palm of your hand flatten the slices of pork slightly, then sprinkle with five spice powder. Heat the oil in a large frying pan, add the pork and cook for 5-6 minutes, turning, until lightly browned and cooked throughout, with no pink meat and juices run clear. Lift out and set aside.
2. In the same pan add the shallot and garlic, cook for 1 minute, then mix in the sliced plums and cook for 2 minutes more. Add the soy sauce, honey and 2 tbsp water and cook for a further 2 minutes until the plums soften.
3. Cook the noodles according to the pack instructions. Add any resting juices from the meat to the plums then serve with the pork and noodles scattered with sesame seeds and salad onion. Delicious with steamed Asian greens.
