    Quick radish & peanut stir-fry

    Serves: 2 as a main or 4 as a side

    Ingredients

    2 tbsp peanut oil
    50g roasted peanuts
    1 red chilli, finely chopped
    90g coconut chunks, finely sliced
    300g mixed radishes, halved if large
    ½ tsp sugar
    2 tsp dark soy sauce
    2 tsp chilli garlic sauce
    10g coriander leaves,
    finely chopped

    Method

    1. Heat the oil in a pan and add the peanuts. Cook for 1-2 minutes, until golden, then add the chilli and coconut; cook for another minute. Add the radishes and stir-fry for another minute.

    2. Stir in the sugar, soy and chilli garlic sauces and a pinch of salt until combined. Scatter over the coriander and serve with piping hot rice or noodles, if liked.
