    100ml soured cream
    2 tsp chipotle paste
    2 medium corn and wheat tortillas
    1 tbsp olive oil, plus extra for brushing
    200g pack Waitrose Frozen Scallops, defrosted and patted dry
    ½ lime, juice
    iceberg lettuce, shredded

    Pickled onion
    1 small red onion, finely sliced
    1 lime, zest and juice
    ¼ x 28g pack coriander, chopped
    1 red chilli, sliced

    2 small ripe avocados
    5 cherry tomatoes, chopped
    ½ lime, juice
    large pinch ground cumin
    large pinch smoked paprika
