    Thai pork loaf

    500g pack minced pork
    1 bunch salad onions, finely sliced
    1 tbsp Cooks’ Ingredients Thai Green Curry Paste
    1 tsp ginger paste
    1 red pepper, deseeded and finely diced
    115g pack baby spinach
    140g pack Waitrose Coconut & Lemongrass Sauce


    1. Preheat the oven to 220°C, gas mark 7. Mix together the mince, salad onions, curry paste, ginger and pepper, season and press into a small loaf tin. Bake for 40-45 minutes or until cooked throughout. Drain away excess juices, remove from the tin and cut into 8 slices.

    2. Meanwhile, place the spinach in a large bowl, cover with clingfilm and microwave on high for
    1-2 minutes until just wilted. Microwave the coconut sauce according to pack instructions.

    3. Serve the meat loaf with the wilted spinach and coconut sauce.
