Thai pork loaf
A delicious and fresh take on classic meat loaf recipes. Green chillies, fragrant lemongrass, zesty Makrut lime leaves and savoury shrimp paste are packed into our authentic Thai green curry paste, raising your mid-week dinner game.

Ingredients
500g minced pork
1 bunch salad onions, finely sliced
1 tbsp Cooks’ Ingredients Thai Green Curry Paste
1 tsp ginger paste
1 red pepper, deseeded and finely diced
115g baby spinach
140g Waitrose coconut & lemongrass sauce
Method
Preheat the oven to 220°C, gas mark 7. Mix together the mince, salad onions, curry paste, ginger and pepper, season and press into a small loaf tin. Bake for 40-45 minutes or until cooked throughout. Drain away excess juices, remove from the tin and cut into 8 slices.
Meanwhile, place the spinach in a large bowl, cover with clingfilm and microwave on high for
1-2 minutes until just wilted. Microwave the coconut sauce according to pack instructions.
Serve the meat loaf with the wilted spinach and coconut sauce.
