Our No.1 Brace of British Partridge is a seasonal speciality, only available during the autumn and winter months of the year; a brace is the traditional term for a pair of partridges. Partridge has the most delicate flavour of all the game birds, and lean, tender meat. The succulent bacon on top keeps the meat moist and adds extra flavour. Remove all packaging. Preheat oven. Place in a roasting dish and brush with olive oil. Cook in the centre of the oven. Baste frequently during cooking. Ensure product is thoroughly cooked, that juices run clear and that no pink colour remains. All cooking appliances vary, this is a guide only. Do not reheat once cooled. (Time 40 minutes, Oven: 200°C, Fan: 180°C, Gas: Gas Mark 6)
