Fill a martini or stemmed sour glass with ice and cold water, then leave to chill. Add the cocktail ingredients to a shaker, then put the lid on and dry shake, without ice, for 30-40 seconds. Remove the lid, add a handful of ice cubes, then return the lid and shake for 30-40 seconds more, until the outside of the shaker is almost too cold to touch.
Discard the iced water from the glass and shake out the remnants, then strain the cocktail into it. Garnish with coffee beans and serve with a biscuit for dipping, if liked.
If you’d rather not use raw egg white, buy egg whites in a carton. They’re pasteurised and easier to measure for cocktails.
