A fresh, zingy salad from Ed Smith that’s reminiscent of old-school prawn cocktail – but better. It’s lovely with toasted sourdough.

Ingredients

  • 100g pack brown crabmeat
  • 2 limes, juice
  • 2 tsp tomato ketchup
  • 4 tbsp extra virgin olive oil
  • ½ tsp caster sugar
  • ¼ tsp sea salt flakes
  • 1 jalapeño chilli, deseeded and finely chopped
  • ½ x 25g pack coriander
  • 1 Perfectly Ripe Avocado, roughly chopped
  • 2 little gem lettuce, leaves separated
  • 100g pack white crabmeat

Method

  1. To make the sauce, whisk the brown crab meat, the juice of 1 lime and the ketchup together in a bowl, then set aside. In another bowl, make the salsa. Combine the oil, remaining lime juice, sugar, salt and 1 tbsp water. Stir through the chilli. Finely chop the coriander stalk and half the leaves, then add with the avocado.

  2. Divide the sauce between 4 plates, spread out with the back of a spoon, then arrange the lettuce on top. Spoon the salsa into and over the leaves, then top with the white crab meat. Add a generous grind of black pepper and scatter over the remaining coriander leaves to finish.
