Avocado and cucumber chopped salad with green shatta

This salad hits all the right spots – creamy from the avocado, a bit of heat from the green shatta, and the satisfying crunch of cucumber. You can eat it as a dip (like a chunky guacamole) with some tortilla chips, load it onto toasted sourdough with poached eggs or stuff it into pittas – the list really is endless. Best of all, there’s no cooking involved. Just chop, mix and eat!

Ingredients

  • 200g baby cucumbers, finely chopped
  • 2 small avocados, roughly chopped
  • ½ red onion, finely chopped
  • ½ x 25g pack coriander, leaves roughly chopped
  • ½ x 25g pack mint, leaves roughly chopped
  • 3 tbsp Ottolenghi Green Chilli Shatta
  • tbsp olive oil
  • 2 tsp lime juice
  • ¼ tsp fine sea salt

Method

  1. Mix everything together in a medium bowl, and serve.
