Ingredients

  • 2 scoops No.1 Belgian Dark Chocolate & Sour Cherry Ice Cream
  • 1 pack/s No.1 Berry Blush Hot Cross Buns
  • 2 tbsp No.1 Raspberry & Madagascan Vanilla Coulis
  • 100g raspberries

Method

  1. Preheat the grill to high. Remove the ice cream from the freezer a few minutes before scooping it.

  2. Split the buns, put onto a baking sheet and toast the cut sides under the grill until golden. Cool briefly.

  3. Sandwich each bun with a scoop of ice cream, then flatten it down a little with the back of a spoon.

  4. Drizzle the ice cream with the coulis. Scatter with the raspberries, add the tops of the buns and serve immediately.

Cook’s tip

For even more of a Black Forest flavour, stir a nip of cherry brandy into the coulis, and dot the sandwich with stoned cherries along with the raspberries.
