Broken eggs with crisps, garlic prawns & roasted red pepper dip

Ingredients

  • 2 tbsp olive oil, plus a drizzle
  • 3 medium free range eggs
  • 213g pack No.1 Red Shrimp with Roasted Garlic & Herb Butter
  • 100g Torres 100% Extra Virgin Olive Oil Potato Chips
  • 5 guindillas hot peppers, stalks removed, thinly sliced
  • 300g pack No.1 Fire Roasted Red Pepper dip
  • 1 unwaxed lemon, zest
  • Pinch smoked paprika
  • Crusty bread, to serve

Method

  1. Warm a large frying pan over a medium-low heat, add the oil and once hot, add the eggs and season. For crispy edges and a yolk that’s still runny, baste the edges of the egg with the oil throughout. Remove from the pan and add to a large mixing bowl.

  2. In the same pan, turn the heat to high, add a drizzle of oil, then cook the shrimps for 2 minutes, until pink, opaque and cooked through. Add the butter from the pack and let it sizzle around the seafood. Take off the heat.

  3. Chop the fried eggs in the bowl using 2 spoons, then push aside. On the opposite side of the bowl, add the crisps, breaking them up a little, then scatter the cooked shrimps over the eggs and pour the buttery juices on the crisps. Add the guindillas, quickly mix with the seafood and eggs, then tumble through the crisps until everything is well combined.

  4. Smooth the red pepper dip over a sharing plate, then pour the shrimp, crisp and egg mixture on top. Serve with the lemon zest, a sprinkle of smoked paprika for colour and crusty bread, then scoop.

Cook’s tip

If you’re doing some midweek entertaining, try this as a sharing starter for 4 – it works on a single large platter or on individual plates. Either way, just get dipping.
