Ingredients

  • 1 tbsp vegetable oil or sunflower oil
  • 15g unsalted butter
  • 2 large onions, thinly sliced
  • ¼ x 20g pack tarragon, finely chopped
  • ½ x 25g pack curly leaf parsley, finely chopped
  • 1 small orange (scrubbed), zest
  • 250ml soured cream
  • 100g mayonnaise

Method

  1. Heat the oil and butter in a large pan over a low-medium heat. Add the onions with a pinch of salt and cook for about 10 minutes, stirring every so often, until softened and starting to colour. Turn the heat down to very low and continue to cook, stirring regularly, for about 30 minutes, until the onions are golden. Tip into a wide serving bowl and allow to cool to room temperature.

  2. Meanwhile, in a small bowl, mix together the tarragon, parsley and orange zest. Once the onions have cooled, mix in the soured cream and mayo; season with a little salt and white pepper. Scatter over the herb mixture and serve.
