Ingredients

CHOUX PASTRY

  • 70g unsalted butter, chilled and cubed
  • 175g strong white bread flour
  • 3 eggs, beaten

PRALINE PASTRY CREAM

  • 150g golden caster sugar
  • 100g leftover whole mixed nuts
  • 3 egg yolks
  • tbsp plain flour
  • 250ml whole milk
  • 1 vanilla pod, split and seeds scraped out (or 1 tsp vanilla extract)

SALTED CHOCOLATE SAUCE

  • 125g dark chocolate (70% cocoa), roughly chopped
  • 50ml double cream
  • 75ml whole milk
  • 25g salted butter
  • 1 tbsp golden syrup
  • 1 pinch flaky sea salt
