Charred red cabbage with agrodolce onions & almonds

Ingredients

  • 3 tbsp extra virgin olive oil
  • 1 red cabbage cut into 6-8 wedges (depending on size)
  • 2 red onions, finely sliced
  • 1 orange
  • 1 tbsp clear honey
  • 3 tbsp red wine vinegar
  • 50g Ottolenghi Smokey & Sweet Marcona Almonds, roughly chopped
  • ¼ x 25g pack mint, leaves picked, larger ones torn

Method

  1. Preheat the oven to 200°C/180ºC fan/gas 6. Line a baking tray with baking parchment. Put 1 tbsp oil in a large, lidded frying pan set over a high heat. Once hot, add the cabbage and sear for 2 minutes on each side, until golden. Transfer to the lined baking tray and cook in the oven for 20 minutes.

  2. Meanwhile, put the remaining oil in the frying pan and lower the heat. Add the onions and a pinch of salt, cover and cook for 20 minutes until soft but not coloured.

  3. Peel and segment the orange, catching any juices in a bowl. Once the onions are cooked, add the honey, vinegar and orange juice to the pan, bubbling until slightly reduced; season. Arrange the cabbage on a platter with the sticky onions. Scatter the orange segments on top with the almonds and mint.
